We make zucchini loaf then freeze it for the winter. We also freeze grated zucchini in case we eat up all the loaf we can make some more!Barb@Witsend
The other really lovely option is jam! I made cougette(UK speak for Zucchini) and Ginger jam two years ago, using golden cougettes. It was yummy! The recipe was for green ones, but the golden were really pretty too!
